What I think about the taste of coffee really doesn't matter at all.  What you think about the taste of coffee matters a lot.  In fact our whole business was designed about doing it the way you like your coffee.  Each bag is marked for how it was roasted and simply by moving the roast number around you can zero the roast to just how you like it.  The art of doing coffee is really doing it the same each time.  We are very good at doing the same thing twice.

In general, this is a bright coffee that lights up the palate from front to back. It is not for people who do not like acidity in coffee (acidity being the prized bright notes in the cup due to an interrelated set of chlorogenic acids). A great Kenya is complex, and has interesting fruit (berry, citrus) flavors, sometimes alternating with spice. This one has the cherished winey flavors. Size: 16 oz

This coffee is great. It is grown between 4,000 and 6,000 feet above sea level, on a plantation with a unique microclimate, whose production has been prized in Europe for more than half a century. There is simply no other coffee prepared so carefully. This year, we will use 8,000 fanegas from the heart of our crop. This is the equivalent of 832,000 pounds of green beans. Of this amount, only 210,000 pounds will survive mill classifications to be bagged for shipment. This represents a selective

From the birthplace of coffee! Harrar is an unwashed, dry processed coffee and, as a result, is an earthy coffee with "huge wildness." Sharp acidity with a slight hint of wininess. Good for espresso to build sharpness, and also shows through in milk based drinks. Best when medium roasted so acidity remains high. Size: 16 oz

Papua New Guinea Organic A

Now Fair Trade Certified! This coffee flew under the radar until alot of customers discovered its beauty. Good body (not as much as Javas, but on par with Celebes), and a good bit of acidity for an island coffee, this bean has a nice spicyness and floralness, with strong hints of cocoa/chocolate and carmel on the finish. It is excellent for blending and for espresso blends, but please drink it straight too - it shines as a straight! It takes a dark roast very well and puffs up nice and large af
